Pineapple Sheera

During such an occasion of picnic we had fare of buffet by all members. Desert served by me ” pineapple sheera” caught attention of all family members and friends. It was appearing very delicious at first sight for them and after they put first spoonful, small bites of real pineapple gave them the real good flavour of pineapple and it add the natural yellow colour of the fruit. Bold flavours are always loved by foodie people.
The cardamom powder and the pinch of nutmeg powder gave the magic touch to the pineapple sheera.

Pineapple Sheera is delicious Indian desert perfect for seasonal time. Milk with pinch of nutmeg powder and subtle flavour of cardamom with bites of pineapple blended in roasted sooji/semolina, is really yummy.

Ingredients:
Sooji/Semolina : 1 Cup
Ghee: 1 1/2 Cup
Milk : 2 Cup
Sugar : 1 1/2 Cup
Nutmeg powder: 1 pinch
Cardamom powder: 1/8 tap
Pistachos: 10
Almonds: 10
Saffron for ganishing

Ingredients for pineapple pulp:
1/2 Cup sugar
1 cup chopped pineapple

Instructions:
1)Take sooji and roast on medium flame till done and keep aside

2) In parallel, add.  1 cup of chopped pineapple to a small pan  and cook adding 1/2 Cup of sugar on medium flame.
After a short while the liquid will
turn thick and chopped pineapple will turn soft.
Transfer to  a bowl. Let it come to room temperature .

3) Slightly roast the chopped almonds and pistachos and keep aside.

4)Boil milk, then add roasted almonds and  pistachos (keep 1/4    portion aside for garnishing) , cardamon powder, nutmeg powder and sugar.
Boil till sugar melts.  Now add sooji  and cook on medium flame till milk is absorbed.

5) Now add pineapple pulp and mix well.

6) After it comes to room temperature transfer it to bowl and garnish with saffron,  almonds and pistachos.

NOTE:
If you need a rich flavour take two Cups of ghee. Do not mix milk and pineapple pulp when they are hot or warm. The milk will curdle. So add pineapple pulp only after milk is absorbed by sooji.
1/2 Cup sugar is there in pineapple pulp,so we have taken 1 1/2 Cup in Sheera. You can add it as per your taste preference and the sweetness
of your pineapple.

Pineapple give bone strength and eye health. It is antioxidant.
Ghee helps in – Healthy digestive system and cures cough.
Semolina heals fracture.
Milk strengthen  bones and gives Vitamin D.
