CARROT BREAD ROLLS

My love through this recipe, for all the children, who are very fussy to eat food.

Carrot Bread rolls

Lovely snacks specially for kids and also for all ages, depending upon how good is their health.

Child who loves smash potatoes will definitely like this.
Good snacks for school and college too.

Ingredients:


1/2 kg Potatoes (5-6 medium size)
3-4 Green chillies
6-8 Garlic petals
1 inch Ginger
1/2 cup grated carrot
1/4 cup Chopped coriander
1 tsp Salt (or as per taste)
Oil to fry
Bread slices (One Big size Bread packet)

Instructions:

Boil potatoes in pressure cooker (3-4 whistles).
Open the lid of the pressure cooker only after it completely cools . Peel the potatoes, smash them and keep aside. Now crush the green chillies, garlic and ginger together to almost fine paste. Add this mix, chopped coriander leaves, grated carrot and salt to smash potatoes and mix well. Your stuffing is ready.
Now, take the bread slices and cut the edges and keep aside.
Keep oil for deep frying in deep pan and let it heat.

In the meantime, prepare the bowl of water with little salt dissolved in it. Dip the bread slice in water and remove the excess water by pressing the slice between two palms. Now place  1-2 tbsp of  stuffing in the center of the bread slice,  roll it and seal from all three sides. Prepare all the rolls and keep ready. When the oil is hot, put the bread rolls one by one  in the pan. Fry till they become light golden brown.
Serve them hot with tomato ketchup and hot tea or coffee.
Serves 7 – 8

Note:

Salt need to be added as per taste.
Green chillies can be reduced or increased as per liking.

Green Pea’s Kheer

Greenpea’s Kheer

Back in 2017 when we had Ganesh idol pooja at home, all relatives and friends were invited for food, we used to have a food feast. All the ladies of the family use to come together and prepare their own special dishes. On such occasion I selected fusion desert ” Green Pea’s Kheer”.This Kheer brought a WOW smile on the faces of all persons present. They were curious to know the recipe.

Green Pea’s Kheer

Time for preparation : 15 minutes
Cooking Time : 20 Minutes
Total time : 35 minutes
Serves – 4

Ingredients:
1/2 cup Green peas
2 cup Milk
1/2 cup Sugar
2tbsp Ghee
6-8 Almond flakes
2 tbsp vanilla Custard powder
1/2 tsp of cardamom powder
1 tsp of milk masala

Instructions:
1) Grind green peas into a coarse paste.
2) Take a deep pan, add ghee and sauté the green peas paste till it is cooked.( 5-7 minutes on medium flame)
3)In parallel boil the 1 1/2 cup milk in a bowl and add sugar, cardamom powder and dry fruit powder. Add this milk to cooked green peas paste and boil again. This gives beautiful natural green colour of peas to the kheer.
4) Take a 1/2 cup of cold milk and add custard powder to it and mix well, add this cold milk to boiling milk of green peas and stir continuously till milk is condensed.(3-4 minutes)
5) Transfer the Green peas Kheer to serving bowl.
6) Garnish with Almond flakes and saffron and serve hot or chilled

Note :
1) Sugar can be adjusted as per taste.
2) Custard powder can be adjusted as per how much thick you want the kheer to be.
3) If you are serving hot add 2 tbsp of custard powder and if you are serving chilled then add 1 tbsp of custard powder.
4) You can adjust the thickness of Kheer by adding little more milk.

3) Better heart health and prevents the growth of cancer cell.

Rose Dahi Bhalle

This recipe is very good for health in summer, as curd gives cooling effect to the body.
It helps to beat summer heat.
One of the most loved recipe on all occasions, weather it is birthday, parties or wedding.

Ingredients:
1cup Urad dal (black gram skinned and split)
2 tbsp rose syrup
2 Cups Curd
1/2 Cup sugar
1/4 TSP salt
1 tbsp black pepper powder
2 tbsp jeera powder
1tsp red chilli powder
1/4 cup chopped coriander leaves
Oil for frying wadas


Instructions:
1)soak Udad dal over night and grind in morning with very little water and add 1/8 tsp of salt and two table spoon of rose syrup to it. Keep aside for an hour.
2)In parallel prepare curd mixture.Take 2 cups of curd add 1/2 cup of sugar,1tsp of salt , 2 tsp of jeera powder,1 tsp of chilli powder,mix all ingredients in a bowl very nicely
Keep aside in the refrigerator till vadas are fried and set in deep serving tray.

3) Take oil in deep frying pan and heat it and at the same time keep one bowl of water(1/2 litre) with 1 tsp of salt added to it.
4) Put balls of dough made from urad dal to make vadas and fry them on medium flame till they turn golden brown. Dip them in the bowl of water.
Keep them for some time till they blow up in size. Hold them in center of both palms and squeeze of excess water and arrange them in deep serving tray. After tray is fully alined with these vadas, pour the curd mixture on the top of this vadas evenly all around in the tray. Sprinkle black pepper powder and red chilli powder above the curd mixture poured on the tray.
Lastly, sprinkle the coriander leaves.

1)Curd helps in keeping skin clean and smooth , and reduce tanning. It boost immune system. Ensures brain health and healthy heart.
2) Urad dal help as anti-ageing , good for pregnant women, boost muscles.

Pineapple Sheera

During such an occasion of picnic we had fare of buffet by all members. Desert served by me ” pineapple sheera” caught attention of all family members and friends. It was appearing very delicious at first sight for them and after they put first spoonful, small bites of real pineapple gave them the real good flavour of pineapple and it add the natural yellow colour of the fruit. Bold flavours are always loved by foodie people.
The cardamom powder and the pinch of nutmeg powder gave the magic touch to the pineapple sheera.

Pineapple Sheera
Preparation Time: 20 Minutes
Cooking Time : 10-15 Minutes.

Pineapple Sheera is delicious Indian desert perfect for seasonal time. Milk with pinch of nutmeg powder and subtle flavour of cardamom with bites of pineapple blended in roasted sooji/semolina, is really yummy.

Ingredients:
Sooji/Semolina : 1 Cup
Ghee: 1 1/2 Cup
Milk : 2 Cup
Sugar : 1 1/2 Cup
Nutmeg powder: 1 pinch
Cardamom powder: 1/8 tap
Pistachos: 10
Almonds: 10
Saffron for ganishing

Ingredients for pineapple pulp:
1/2 Cup sugar
1 cup chopped pineapple

Instructions:
1)Take sooji and roast on medium flame till done and keep aside

2) In parallel, add.  1 cup of chopped pineapple to a small pan  and cook adding 1/2 Cup of sugar on medium flame.
After a short while the liquid will
turn thick and chopped pineapple will turn soft.
Transfer to  a bowl. Let it come to room temperature .

3) Slightly roast the chopped almonds and pistachos and keep aside.

4)Boil milk, then add roasted almonds and  pistachos (keep 1/4    portion aside for garnishing) , cardamon powder, nutmeg powder and sugar.
Boil till sugar melts.  Now add sooji  and cook on medium flame till milk is absorbed.

5) Now add pineapple pulp and mix well.

6) After it comes to room temperature transfer it to bowl and garnish with saffron,  almonds and pistachos.

NOTE:
If you need a rich flavour take two Cups of ghee. Do not mix milk and pineapple pulp when they are hot or warm. The milk will curdle. So add pineapple pulp only after milk is absorbed by sooji.
1/2 Cup sugar is there in pineapple pulp,so we have taken 1 1/2 Cup in Sheera. You can add it as per your taste preference and the sweetness
of your pineapple.

Pineapple give bone strength and eye health. It is antioxidant.
Ghee helps in – Healthy digestive system and cures cough.
Semolina heals fracture.
Milk strengthen  bones and gives Vitamin D.
